ABSTRACT

Atualmente, tem-se discutido a utilização de insetos na alimentação animal devido ao seu potencial para substituir as fontes tradicionais de proteína utilizadas. O objetivo deste trabalho foi determinar a composição nutricional de larvas de Tenebrio molitor e de grilos do gênero Gryllus assimilis. Os teores de energia bruta (kcal/kg), proteína bruta (g/kg), extrato etéreo (g/kg), cinza (g/kg), FDN (g/kg) e FDA (g/kg) encontrados nas larvas de Tenebrio molitor foram de 7.188,6, 490,2, 335,4, 36,8, 71,8, e 64,0 respectivamente; nos grilos (Gryllus assimilis), os valores foram de 5.942,6, 541,3, 75,2, 49,1, 277,8, e 193,0 respectivamente. Os macros e microminerais quantificados foram fósforo, potássio, sódio, cálcio, magnésio, ferro, manganês, zinco e cobre. Nas larvas de Tenebrio molitor, os valores encontrados foram de 8,56 g/kg, 8,39 g/kg, 1,39 g/kg, 0,44 g/kg, 2,3 g/kg, 48,4 mg/kg, 15 mg/kg, 189 mg/kg e 18 mg/kg respectivamente. Para os grilos (Gryllus assimilis), os teores encontrados foram respectivamente de 8,30 g/kg, 11,6 g/kg, 1,10 g/kg, 3,88 g/kg, 0,82 g/kg, 96,8 mg/kg, 23,7 mg/kg, 18,3 mg/kg e 21,7 mg/kg. Larvas de Tenebrio molitor e grilos do gênero Gryllus assimilis podem ser alternativas para reduzir o uso de fontes de proteína vegetal na alimentação animal.(AU)

ABSTRACT

The objective of this study was to evaluate the effect of different protein sources on the performance of lamb ewes and their offspring supplemented in deferred pasture. The treatments were the different protein sources: soybean meal, cotton cake, babassu cake and coconut cake. The ewes were weighed and evaluated for their body condition score during the gestation, parturition and weaning phases. The lambs were weighed at birth and at weaning. The structural variables and chemical composition of the pasture were evaluated during the usage period. Grass height and forage mass were higher when the ewes were in the gestation and weaning stages. The leaf mass was not altered during the pasture usage with a mean value of 566.1kg ha-1 DM. The highest levels of crude protein in the leaf blade were observed during the parturition and weaning phases. The body weight of the ewes did not differ between the sources with averages 45.0, 39.9 and 36.6kg for the gestation, parturition and weaning phases, respectively. Weights at birth and at weaning had an effect from protein sources, with the highest values observed in the lambs of ewes who received soybean meal and babassu cake supplementation. The lambs of ewes supplemented with soybean had higher average daily gain and total gain. Babassu, coconut and cotton cakes can replace soybean meal in supplementation of ewes in deferred pasture.(AU)


O objetivo deste estudo foi avaliar o efeito de diferentes fontes de proteína no desempenho de ovelhas e suas crias suplementadas em pastagem diferida. Os tratamentos foram as diferentes fontes proteicas: farelo de soja, tortas de algodão, babaçu e coco. As ovelhas foram pesadas e avaliadas quanto ao escore de condição corporal durante as fases de gestação, parição e desmame. Os cordeiros foram pesados no nascimento e no desmame. As variáveis estruturais e a composição química do pasto foram avaliadas durante o período de uso. A altura do dossel e a massa de forragem foram maiores quando as ovelhas estavam nas fases de gestação e desmame. A massa foliar não foi alterada durante o uso do pasto, com um valor médio de 566,1kg ha-1 MS. Os maiores teores de proteína bruta na lâmina foliar foram observados durante as fases de parto e desmame. O peso corporal das ovelhas não diferiu entre as fontes proteicas, com médias de 45,0, 39,9 e 36,6kg para as fases de gestação, parto e desmame, respectivamente. Os pesos ao nascimento e ao desmame tiveram efeito das fontes proteicas, com os maiores valores observados nos cordeiros de ovelhas que receberam suplementação com farelo de soja e torta de babaçu. Os cordeiros suplementados com soja apresentaram maior ganho médio diário e ganho total. As tortas de babaçu, coco e algodão podem substituir o farelo de soja na suplementação de ovelhas em pastagem diferida.(AU)

ABSTRACT

Introducción: la quinua tiene un buen rendimiento de culti-vo en la provincia de Mendoza. Posee un elevado porcentaje de proteínas (de 16 a 23 g/%), de 4 a 9% de grasas poliinsa-turadas y un importante aporte de fibras. Objetivos: formular hamburguesas con mejor perfil nutricional. Materiales y métodos: con varios ensayos se prepararon me-dallones. Se definieron dos recetas: una contenía 100% de car-ne vacuna y la otra 50% de carne vacuna más 50% de quinua previamente lavada y cocinada con las técnicas adecuadas; el resto de la formulación con los mismos ingredientes en iguales proporciones. Se realizaron por triplicado y los análisis por dupli-cado. Para su análisis se aplicó el esquema de Weende. Para el análisis estadístico se aplicó la prueba T de Student. Resultados: para la hamburguesa de carne (HC) su valor ca-lórico fue de 169±0,8 kcal/100g y para la de quinua (HQ) de 170±0,56 kcal/100g, sin existir diferencias estadísticamente significativas. En cuanto al contenido de carbohidratos se in-crementó de 11±0,22 g% (HC) a 13±0,44 g% (HQ) y el de fi-bra alimentaria de 0,66±0,03 g% (HC) a 3,51±0,03 g% (HQ). El de proteínas disminuyó de 16±0,24 g% (HC) a 12±0,43 g% (HQ) y el de lípidos se incrementó de 6,8±0,06 g% (HC) a 7,8±0,12 g% (HQ), pero a expensas de mejorar el perfil li-pídico dado que se redujeron los ácidos grasos saturados de 3,3±0,07 g% a 2±0,03 g%. El aporte de sodio disminuyó de 123±1,33 mg% (HC) a 113±1,67 mg% (HQ). Conclusiones: se concluye que, con el agregado de quinua, en la preparación de un alimento popular (hamburguesa), se logra un producto más saludable por su aporte de fibras y su mejora en el perfil lipídico.

ABSTRACT

It is widely accepted that selection for high milk yield in dairy cows has negatively affected their reproductive performance. After calving, dairy cows experience a nutritional imbalance due to an asynchrony in the occurrence of the lactation and dry matter intake peaks. In the tropics, this situation is exacerbated due to poor quality and/ or availability of the diet. A study was carried out to describe the nutritional and reproductive behavior of two-to-four parturition crossbred cows (Gyr (Bos indicus) x Holstein (Bos taurus)) divided in two groups according to their calving to first service interval (CFSI): Group 1: ≤50 days CFSI, n=7; Group 2: ≥50 days CFSI, n=8. Animals were grazing in an intensive silvopastoral system (ISS) based on Leucaena leucocephala and Cynodon plectostachyus and also received protein, energy and mineral supplementation. Dry matter (DMI) and nutrient intake were individually estimated and correlations between reproductive and nutritional parameters were performed. Additionally, serum progesterone concentration was monitored. Group 2 had greater forage and total DMI and milk production than Group 1 (P<0.05). Hence, Group 2 had greater nutrient intake from forages than Group 1 (P<0.05). Group 1 had a positive nutritional balance and an optimum reproductive performance compared to Group 2, which had a negative energy balance and lengthier days with open intervals (P<0.05). It was corroborated that protein and energy are required in adequate levels, to ensure that uterus undergoes involution correctly and ovarian activity starts soon in the postpartum period.(AU)


É amplamente aceito que a seleção para alta produção de leite em vacas leiteiras tem interferido no seu desempenho reprodutivo. Depois do parto, um extraordinário desafio nutritivo é experimentado pelas vacas leiteiras, devido a uma assincronia entre a ocorrência do pico de lactação e a do pico de consumo de matéria seca. Este estudo foi realizado para descrever o comportamento reprodutivo de vacas mestiças de dois a quatro partos (Gyr (Bos indicus) x Holstein (Bos taurus)), divididos em dois grupos, de acordo com seu intervalo parto ao primeiro serviço (IPPS): grupo 1: ≤ 50 dias IPPS, n = 7; grupo 2: ≥50 IPPS dias, n = 8. Os animais pastaram em um sistema silvipastoril intensivo (SSI), com base em Leucaena leucocephala e Cynodon plectostachyus, e receberam também suplementação de proteína, energia e mineral. Matéria seca (CMS) e ingestão de nutrientes foram estimadas individualmente e correlações entre parâmetros reprodutivos e nutricionais foram realizadas. Além disso, a concentração de progesterona em soro foi monitorizada. Vacas do grupo 2 apresentaram maior ingestão de forragem, de dieta total e de produção total de leite do que vacas do grupo 1 (P<0,05). Dessa forma, vacas do grupo 2 apresentaram maior consumo de nutrientes de forrageiras do que os animais do grupo 1 (P<0,05). Vacas do grupo 1 tinham um equilíbrio nutricional positivo e um ótimo desempenho reprodutivo em relação ao grupo 2, que teve um balanço energético negativo e mais longos intervalos de dias abertos (P<0,05). Foi corroborado que a proteína e a energia são necessárias em níveis adequados, assim o útero sofre involução corretamente e a atividade ovariana começa logo no período pós-parto.(AU)

ABSTRACT

The activities of enzymes from a number of metabolic pathways have been used as a tool to evaluate the best use of nutrients on fish performance. In the present study the catfish Rhamdia quelen was fed with diets containing crude protein-lipid-carbohydrate (%) as follows: treatment (T) T1: 19-19-44; T2: 26-15-39; T3: 33-12-33; and T4: 40-10-24. The fish were held in tanks of re-circulated, filtered water with controlled temperature and aeration in 2000L experimental units. The feeding experiment lasted 30 days. The following enzymes of the carbohydrate metabolism were determined: Glucokinase (GK), Phosphofructokinase 1 (PFK-1), Pyruvate kinase (PK), Fructose-1,6-biphosphatase 1 (FBP-1). The activities of 6 phosphogluconate dehydrogenase (6PGDH) and glucose 6 phosphate dehydrogenase (G6PDH) were also assayed. The influence of nutrient levels on the enzyme activities is reported. The increase of dietary protein plus reduction of carbohydrates and lipids attenuates the glycolytic activity and induces hepatic gluconeogenesis as a strategy to provide metabolic energy from amino acids. The fish performance was affected by the concentrations of protein, lipid and carbohydrates in the diet. The greatest weight gain was obtained in fish fed diet T4 containing 40.14% of crude protein, 9.70% of lipids, and 24.37% of carbohydrate, respectively.(AU)


As atividades de enzimas das vias metabólicas têm sido utilizadas como uma ferramenta para avaliar a melhor utilização dos nutrientes e o desempenho dos peixes. No presente estudo, o jundiá foi alimentado com rações contendo diferentes concentrações de proteína bruta, lipídeos e carboidratos (%), da seguinte forma: tratamento (T) T1: 19-19-44; T2: 26-15-39; T3: 33-12-33; e T4: 40-10-24. Os peixes foram mantidos em tanques de recirculação, com água filtrada, temperatura controlada e aeração em unidades experimentais de 2.000L. O período experimental foi de 30 dias. Foram aferidas as atividades das enzimas glicoquinase (GK), fosfofrutoquinase 1 (PFK-1), piruvato quinase (PK) e frutose-1,6-difosfatase (FBP-1). Também foram aferidas as atividades da 6-fosfogluconato desidrogenase (6PGDH) e glicose-6-fosfato desidrogenase (G6PDH) da via das pentoses. É relatado que níveis de nutrientes influenciam as atividades enzimáticas das vias metabólicas. No presente estudo, o aumento da proteína da dieta e a redução de hidratos de carbono e lipídeos reduziram a atividade glicolítica e induziram a gliconeogênese hepática como uma estratégia para fornecer energia pelos aminoácidos. O desempenho dos peixes foi afetado pelas concentrações de proteínas, lipídeos e carboidratos na dieta. O maior ganho de peso foi obtido em peixes alimentados com dieta T4 contendo 40,14% de proteína bruta, 9,70% de lipídeos, e 24,37% de carboidratos, respectivamente.(AU)

ABSTRACT

Para verificação da ocorrência de alterações morfológicas no fígado, foram coletados dez animais de cada dieta, no 30º dia (1º período experimental) e no 60º dia (2º período experimental), sendo esse, o último dia do período experimental e início do clímax da metamorfose. Os girinos foram distribuídos em delineamento experimental inteiramente casualizado (DIC) com três tratamentos: dieta experimental com 32,68% de proteína bruta e duas dietas comerciais com 37,92% e 57,53% de proteína bruta. Os órgãos coletados foram fixados em solução de Bouin e depois submetidos às práticas da rotina histotecnológica e coradas com hematoxilina - Eosina (HE). Na avaliação microscópica do fígado foram encontradas diversas alterações morfológicas como: Desorganização e vacuolização de hepatócitos, infiltrado inflamatório mononuclear periportal, multifocal e difuso, infiltrado inflamatório eosinofílico, congestão, hemorragia, hemólise e necrose. As alterações hepáticas encontradas neste estudo sugerem que as dietas utilizadas para os girinos de rã-touro, não atenderam suas necessidades dietéticas, afetando a homeostasia dos mesmos, comprometendo assim, sua sanidade.(AU)


To verify the occurrence of liver morphological changes, bullfrog tadpoles were fed three diets: an experimental diet with 32.68% crude protein and two commercial diets with 37.92% and 57.53% crude protein. Tadpoles were distributed into a completely randomized design (CRD) with three treatments and four replications. Liver samples were collected twice, on the 30th and 60th day of the experiment. Tadpole livers were fixed in Bouin's solution, then subjected to routine histotechnology procedures, and stained with hematoxylin - eosin (HE). Microscopic evaluation of liver tissue showed several morphological changes like disorganization and vacuolization of hepatocytes; periportal, multifocal and diffuse mononuclear inflammatory infiltrate, eosinophilic inflammatory infiltration, congestion, hemorrhage, hemolysis and necrosis. The liver changes found in this study suggest that diets used for bullfrog tadpoles, did not meet their dietary needs, what affected their homeostasis, thus compromising their health.(AU)

ABSTRACT

Este estudo teve como objetivo avaliar as relações de valina:lisina digestíveis em dietas com teor reduzido de proteína bruta (PB) e os efeitos dessa redução sobre desempenho e rendimento de carcaça em frangos de corte. Foram utilizados 1200 pintos machos seguindo modelo inteiramente ao acaso, com seis tratamentos de seis repetições (exceto controle, com 10 repetições), compostos por 30 aves cada. O tratamento controle (T1) foi formulado conforme os níveis de proteína bruta e aminoácidos (AAs) recomendados por Rostagno et al . (2011), e os demais tratamentos (T2 a T6) tiveram seus níveis de PB reduzidos (4% em relação ao controle) e variaram em função da relação valina:lisina digestíveis, com cinco níveis equidistantes em intervalos de 0,07:1, variando de 0,63:1 e 0,91:1 (dietas até 21 dias) e de 0,64:1 e 0,92:1 (dietas após 21 dias). As seguintes características de desempenho foram avaliadas: ganho de peso, consumo de ração, conversão alimentar, viabilidade criatória e índice de eficiência produtiva. Aos 46 dias de idade, seis animais por repetição foram abatidos para determinação de rendimento de carcaça e de cortes comerciais. As diferentes relações valina:lisina digestíveis não influenciaram o desempenho dos animais (P>0,05) para nenhuma característica avaliada. A redução proteica piorou a conversão alimentar dos animais (P≤0,05) até os 21 dias. Os resultados sugerem que os níveis de valina utilizados não afetam o desempenho dos animais, apenas o rendimento de peito e que, portanto, a redução proteica não é recomendada durante as três primeiras semanas de criação.


This study aimed to evaluate valine:lysine ratios in diets with reduced content of crude protein and the effects of this reduction on the performance of broiler chickens. 1200 male chicks were used following a complete randomized design with six replicates of six treatments (except control, with 10 replicates), each one with 30 chicks. The control treatment (T1) was formulated following levels of crude protein (CP) and the amino acids (AAs) recommended by Rostagno et al. (2011), and the other treatments (T2 to T6) had reduced levels of CP (4 % compared to control) and varied in proportion valine:lysine, with 5 levels at equidistant intervals 0.07:1 ranging from 0.63:1 to 0.91:1 (up to 21 days) and from 0.64:1 to 0.92:1 (after 21 days). The performance characteristics measured were: weight gain, feed intake, feed conversion, viability and productive efficiency index. At 46 days six animals per replicate were slaughtered for evaluation of carcass and commercial cuts. The different valine:lysine ratios did not affect animal performance (P>0.05). Reducing protein impaired feed conversion (P≤.05) up to 21 days. The results suggest that levels of valine used did not affect the broilers' performance, however, breast meat yield and reduced protein are not recommended during the first three weeks.

ABSTRACT

ResumoA presente pesquisa se propõe a estudar as inter-relações entre a prevenção do câncer de mama e os fatores socioeconômicos, demográficos, comportamentais, regionais e de saúde na determinação da frequência temporal à busca por prevenção via realização de mamografias e exames de mama no Brasil. A partir das informações do suplemento de saúde da Pesquisa Nacional por Amostra de Domicílios, de 2008, foi construída uma amostra que contempla apenas mulheres com mais de 40 anos de idade. Para o atendimento do objetivo proposto, faz-se uso da estimação do modelo logit, ordenado de chances proporcionais parciais, que indicaram como principais resultados: i) melhores condições socioeconômicas, residir nas regiões mais desenvolvidas do país, uma composição familiar que inclua filhos, apresentar uma boa autoavaliação da própria saúde e já ter sido diagnosticada com algum tipo de câncer, desenham o perfil da mulher que mais se previne contra o câncer de mama, tanto em relação à procura por mamografia, como a uma maior demanda por exame de mama realizado por médico ou enfermeiro e; ii) os resultados apontam ainda para o fato de que grande parte das entrevistadas realizaram os exames em questão há pelo menos um ano, ou nunca passaram por tais procedimentos.


AbstractThis research sets out to study the interrelationship between breast cancer prevention and the socioeconomic, demographic, behavioral, regional and health factors in determining the temporal frequency of tests for prevention by performing mammograms and breast exams in Brazil. Based on the information of the health supplement of the National Sampling Survey of Domiciles of 2008, a sample that includes only women over age 40 was created. To achieve the desired goal, the estimate of the ordered logit model is used to establish partial proportional odds, which revealed the main results as follows. Women with a good socioeconomic status, living in the more developed regions of the country, family structure including children, making a good self-assessment of health and having been diagnosed with some type of cancer in the past. This is the profile of women who are best at preventing breast cancer, both in relation to the demand for mammograms and to a greater demand for breast exam performed by a doctor or a nurse. The results also point to the fact that the majority of those interviewed had either had the tests in question within the previous year, or had never been exposed to such procedures.

ABSTRACT

Toxoplasma gondii causes toxoplasmosis, a worldwide disease. Experimentation with pigs is necessary for the development of new therapeutic approaches to human diseases. BR-1 mini pigs were intramuscularly infected with T. gondii with tachyzoites (RH strain) or orally infected with cysts (ME-49 strain). Haematology and serum biochemistry were analysed and buffy coat cells were inoculated in mice to determine tachyzoite circulation. No alterations were observed in erythrocyte and platelet values; however, band neutrophils increased seven days after infection with ME-49. Serology of the mice inoculated with pig blood leucocytes revealed circulating ME-49 or RH strain tachyzoites in the pigs' peripheral blood at two and seven or nine days post-infection. The tachyzoites were also directly observed in blood smears from the infected pigs outside and inside leucocytes for longer periods. Alanine-aminotransferase was high at days 21 and 32 in the RH infected pigs. After 90 days, the pigs were euthanised and their tissue samples were processed and inoculated into mice. The mice serology revealed the presence of parasites in the hearts, ileums and mesenteric lymph nodes of the pigs. Additionally, cysts in the mice were only observed after pig heart tissue inoculation. The infected pigs presented similar human outcomes with relatively low pathogenicity and the BR-1 mini pig model infected with ME-49 is suitable to monitor experimental toxoplasmosis.

ABSTRACT

La textura es la característica más valorada en los cefalópodos. Los factores que principalmente afectan la textura del pulpo son congelación, escaldado y cocción. El objetivo de esta investigación fue evaluar el efecto de la congelación, escaldado y diferentes tiempos de cocción sobre la textura y perfil electroforético de las proteínas de brazos de pulpo (Octopus vulgaris). Los ejemplares fueron capturados con nasa en las cercanías de la Isla de Margarita y transportados al laboratorio, donde fueron empacados y sometidos a: a) congelación a -27°C ó a -20 °C b) escaldado o no escaldado c) cocción por 25, 35 ó 45 min. Se determinó la fuerza de corte sobre tiras de brazo de pulpo mediante celda de Kramer. Extractos de proteínas fueron sometidos a electroforesis en gel de poliacrilamida-dodecil sulfato de sodio (SDS-PAGE) al 12 % según método Laemmli. Fue realizada evaluación sensorial de la preferencia de la textura empleando escala hedónica de 7 puntos y panel no entrenado. La textura del pulpo no resultó afectada ni por la temperatura de congelación ni el escaldado. El pulpo congelado, al cocerlo, fue más blando que el fresco. En la medida que aumentó el tiempo de cocción, el pulpo se ablandó más. La cocción no afectó significativamente la cadena pesada de miosina (MHC) (205 kD); sin embargo, causó aparición de agregados proteínicos más pesados, nuevas bandas y pérdida de definición de bandas. Las fracciones de miosina y de paramiosina resultaron más afectadas cuando el pulpo fue congelado previo a la cocción.


Texture is the most valuable feature in cephalopods. Factors that mainly affect the texture of octopus are: freezing, scalding and cooking. The aim of this study was to assess the effect of freezing, scalding and length of cooking time on the texture and electrophoretic pattern of proteins of octopus arms. Octopuses were trapped near Margarita Island and carried with ice to the laboratory where they were packed and subjected to: a) freezing at -27°C or at -20 °C b) scalding c) cooking for 25 min, 35 min or 45 min. Shear force was determined by Kramer cell on strips of octopus arms. SDS-PAGE was done according to the Laemmli method with 12% polyacrilamide gels. A sensory evaluation of the preference of texture was carried out using a hedonic scale of 7-points and a non-trained panel. Octopus texture was not affected by freezing temperature or scalding. Frozen octopus was softer after cooking than fresh. The longer the cooking time was, the softer the octopus was. Myosin heavy chain (MHC) was not significantly affected by scalding or cooking; however large aggregates heavier than MHC, new bands and loss of resolution of the bands appeared. Myosin and paramyosin bands were more affected by freezing prior to cooking.

ABSTRACT

El tomate de árbol (Cyphomandra betacea) es apreciado por sus cualidades nutritivas y ser fuente de compuestos antioxidantes, calcio, fósforo, potasio y hierro, azúcares, ácidos orgánicos, pectinas y flavonoides. En este estudio se determinaron parámetros físicos (peso, tamaño, fuerza compresión, humedad) y químicos (°Brix, acidez titulable, pH, proteína, fibra dietaria, cenizas, minerales y bioaccesibilidad de minerales, pectina, compuestos antioxidantes) del fruto procedente del Estado Aragua, Venezuela, como una contribución para incentivar y diversificar su consumo. La caracterización reflejó que los frutos estaban en estado de madurez para su consumo (°Brix 10,51, pH 3,5, acidez 0,02 g/100 ml y fuerza de compresión 4,32 Kgf/cm2), con rendimiento de pulpa del 74%. Los resultados del análisis de la pulpa madura reflejan un aporte de 30 Kcal/100g, fibra dietaria (4,10g/100g) y valores de fósforo, calcio, magnesio potasio y hierro de 331,32; 21,25; 21,18; 17,03; 7,44 mg/100g respectivamente. Se obtuvo 6,71 y 1,86 % de bioaccesibilidad para calcio y hierro. La pectina extraída (1,00 g/100g) resultó ser de alto metoxilo y alto grado de esterificación. La capacidad antioxidante de la pulpa madura (EC50 de 165 g /g DPPH y poder reductor de 0,07 mmol Fe +2/100g) pudiera atribuirse a la presencia de ácido ascórbico (23,32 mg/100g), licopeno (1,22 mg/100g), compuestos fenólicos (1,39 mg EAG/ g), antocianinas (0,29 mg cianidina/g) y taninos (0,40 mg catequina/ 100g). Los resultados obtenidos pueden ser utilizados para promover los beneficios sobre la salud y sugerir su uso como ingrediente funcional en el desarrollo de productos.


Physical, chemical and bioactive compounds of tree tomato (Cyphomandra betacea). Tree tomato (Cyphomandra betacea) is appreciated for its excellent nutritional qualities, being considered a good source of antioxidants compounds, calcium, phosphorus, potassium and iron, sugars, organic acids, pectins and flavonoids. In this study, were evaluated physical parameters (weight, size, compression strength and humidity) and chemical (°Brix, titratable acidity, pH, protein, dietary fiber, ash, minerals and their bioaccesibility, pectin, antioxidants compounds) of the fruit from the Aragua State, Venezuela, as a contribution to stimulate and diversify the consumption of the tree tomato. The characterization showed that the fruits were at the ripening stage for consumption (°Brix 10.51, pH 3.5, acidity 0.02 g/100ml and 4.32 Kgf/cm2 compression strength) gave a yield of 74% pulp. The analytical results of the ripped pulp showed a content of 30 Kcal/100g, dietary fiber (4.10g/100g), and minerals such as phosphorous, calcium, magnesium, potassium and iron (331.32, 21.25, 21.18, 17.03 and 7.44 mg/100g, respectively). Bioaccesibility values of 6.71 and 1.86% were reported for calcium and iron. The extracted pectin (1.00 g/100g) was classified as high methoxyl with high degree of esterification. The antioxidant capacity of the ripped pulp (EC50 of 165.00 g /g DPPH and reducing power of 0.07 mmol Fe +2/100g), could be attributed to the presence of ascorbic acid (23.32 mg/100g), lycopene (1.22 mg/100 g), and phenolic compounds (1.39 mg GAE/g), anthocyanins (0.29 mg cyanidin/ g) and tannins (0.40 mg catechin/100g).The results obtained encourage the nutritional benefits and suggest applications as a functional ingredient in food product development.

ABSTRACT

El consumo proteico excesivo incrementa la producción endógena de ácido, lo que puede conducir a acidosis metabólica, pérdida de masa ósea, hipercalciuria, urolitiasis, retardo del crecimiento y sarcopenia, entre otros. Estimar y analizar la Carga Ácida Potencial Renal (CAPR) de la dieta en niños de 2 a 6 años. Estudio descriptivo y transversal, que incluyó 52 niños de la consulta de niños sanos del Instituto de Previsión y Asistencia Social del Ministerio del Poder Popular para la Educación, estado Miranda. Las principales variables estudiadas fueron: (1) consumo de macronutrientes, y patrón alimentario evaluado mediante recordatorio de 24 horas (R24h) y cuestionario de frecuencia de consumo (CFC). El R24H permitió determinar adecuación nutricional y el CFC la calidad de la dieta y factores de protección y riesgo dietético para una mayor carga ácida de la dieta. El consumo de nutrientes se comparó con recomendaciones nacionales e internacionales; (2) la CAPR según el método de Remer y Manz. Para el análisis estadístico se utilizó el programa SPSS, v17.0. El consumo de proteínas estuvo elevado en 46,15% de los niños. Los alimentos con mayor desbalance fueron: carnes y lácteos por consumo excesivo, frutas y hortalizas por consumo deficiente. La CAPR fue positiva en 96,2% de los niños y se correlacionó positivamente (p<0,05) con el consumo de energía, proteínas, grasas, carnes y lácteos. La dieta de los niños estudiados se caracterizó por su excesiva carga ácida con el consecuente riesgo para la generación de ácidosis sistémica y sus consecuencias metabólicas


High protein intake increases endogenous acid production, which may lead to metabolic acidosis, decrease in bone and muscle mass, hipercalciuria and urolithiasis, among other disorders. Estimate and analyze the Potential Renal Acid Load (PRAL) of the diet in children from two to six years of age. The study is descriptive, cross-sectional and correlational wich included fifty two children who assisted to an ambulatory well child clinic in Carrizales, Miranda State, Venezuela. The main variables studied were: (1) Macronutrient food intake and diet pattern which was assessed by a 24 hour recall (24hR) and a food frequency questionnaire (FFQ). The 24hR allowed to evaluate nutritional adequacy and the FFQ, the diet quality, as well as diet protection and risk factors. Nutrient intake was compared with national and international recommendations; (2) PRAL was determined according to Remer and Manz. Statistical analysis was performed by means of the SPSS, v17.0 software. Protein intake was high in 46,15% of the children. Food groups with the highest unbalance were meat and dairy products for excessive intake and fruits and vegetables for defective intake, both of which represent risk factors for acid production. PRAL was positive in 92% of the children and was positively correlated (p<0.05) with intake of energy, proteins, fat and with the food groups of meat and dairy. The diet of the studied children was characterized by an excessive acid load with the risk for the generation of systemic acidosis and its metabolic consequences

Debido a la complejidad de la enfermedad renal, su tratamiento nutrimental es complicado y muchos alimentos se encuentran restringidos, entre ellos el pescado, por su contenido de fósforo. El objetivo del presente estudio fue cuantificar en el filete de diez especies de pescado, de consumo cotidiano en México: (Cyprinus carpio carpio, Ophichthus rex, Symphurus elongatus, Eucinostomus entomelas, Chirostoma patzcuaro, Bairdiella chrysoura, Salmo salar, Oreochromis urolepis hornorum, Sphyraena guachancho, Istiophorus albicans), el contenido de fósforo (P), proteína (Pr), colesterol, sodio, potasio, vitaminas D3 y E y ácidos grasos n-3 (EPA+DHA); para identificar, aquellos pescados que podrían ser incluidos en la dieta renal. Los análisis se realizaron de acuerdo a las técnicas del AOAC. Con los resultados se calcularon las relaciones entre los nutrimentos benéficos (EPA+DHA, vitaminas) y limitantes (Pr, P, colesterol). Los valores de proteína variaron entre 16.5 y 33.5g/100g de filete; el pescado con mayor contenido de fósforo fue Salmo salar y con menor Symphurus elongatus. La cantidad de EPA+DHA varió desde 79.64mg/100g hasta 1,381.53mg/100g. Tomando en cuenta la relación P/g de Pr recomendada para pacientes renales, todas las especies analizadas exceptuando Salmo salar, Ophichthus rex y Istiophorus albicans pueden ser incluidas en la dieta dependiendo de la etapa de la enfermedad. Considerando la relación entre P/EPA+DHA, las especies recomendadas para el paciente renal son Symphurus elongatus, Bairdiella chrysoura, y Sphyraena guachancho.


Evaluation of ten fish species to be included as part of renal diet, due to their protein, phosphorus and fatty acids content. Because renal disease is highly complex, its nutritional treatment is complicated and many foods are restricted, including fish because its phosphorus content. The aim of the present study was to analyze ten fillet fish species, commonly consumed in Mexico (Cyprinus carpio carpio, Ophichthus rex, Symphurus elongatus, Eucinostomus entomelas, Chirostoma patzcuaro, Bairdiella chrysoura, Salmo salar, Oreochromis urolepis hornorum, Sphyraena guachancho, Istiophorus albicans), to determine their phosphorus (P), protein (Pr), cholesterol, sodium, potassium, vitamins D3 and E, and n-3 PUFA (EPA+DHA) according to the AOAC techniques, in order to identify which species could be included in renal diet; particularly because of their risk:benefit relations (calculated with those results). Protein values ranged from 16.5 to 33.5g/100g of fillet; the specie with the highest phosphorus contest was Salmo salar, and with the lowest, Symphurus elongatus. EPA+DHA quantity ranged from 79.64mg/100g to 1,381.53mg/100g. Considering de P/Pr relation recommended to renal patients, all analyzed species (except Salmo salar, Ophichthus rex and Istiophorus albicans) could be included in their diet. As for the P/EPA+DHA relation, the species most recommended to renal patients are Symphurus elongatus, Bairdiella chrysoura and Sphyraena guachancho.

OBJETIVOS: Descrever a metodologia de preparo de dois aditivos, líquido e em pó, derivados do leite humano e comparar a constituição com aditivo comercial FM85®. MÉTODOS: Foram utilizadas 40 amostras de leite humano para o preparo dos suplementos líquido e em pó. Ambos passaram por três fases de preparo: desnate, evaporação e retirada da lactose. Após essas fases, o suplemento líquido está pronto, e o em pó necessita da quarta fase - a liofilização. Em cada amostra dos suplementos líquido e em pó, foram adicionados, respectivamente, 80 mL (grupo I) e 100 mL (grupo II) de pool de leite humano de banco. Para comparação, 20 amostras de 100 mL do pool foram acrescidas de 5 g do suplemento FM85® (Nestlé) (grupo III). Realizaram-se análises de hidratos de carbono, proteína, lipídios, cálcio, fósforo, sódio, osmolalidade e conteúdo calórico, considerando diferença significativa p < 0,05. RESULTADOS: Os grupos I, II e III mostraram, respectivamente, os seguintes resultados: proteínas = 1,81, 2,38 e 1,96 g/dL (p < 0,001); hidratos de carbono = 6,70, 7,25 e 10,06 g/dL (p = 0,006); gordura = 3,75, 3,75 e 3,73 g/dL (p = 0,96); cálcio = 36,92, 44,75 e 79,37 mg/dL (p = 0,001); fósforo = 20,02, 23,28 e 56,30 mg/dL (p = 0,02); sódio = 14,32, 14,40 e 20,33 mEq/L (p = 0,143); osmolalidade = 391,45, 412,47 e 431, 00 mOsmol/kgH2O (p = 0,074); e conteúdo calórico = 67,78, 72,27 e 81,65 kcal (p = 0,001). CONCLUSÃO: Os aditivos estudados diferem significativamente do aditivo comercial FM85® em alguns de seus constituintes, e a sua constituição pode ou não atender às quantidades de nutrientes propostas pelas recomendações mais recentes.


OBJECTIVES: To describe the methodology for the preparation of two additives derived from human milk, liquid and powdered, and to compare this composition with the commercial additive FM85®. METHODS: For the preparation of the liquid and powdered supplements, 40 samples of human milk were used. Both supplements have been through three preparation phases: skimming, evaporation and lactose removal. After these phases, the liquid supplement is ready, and the powdered requires a fourth phase - lyophilization. To each sample of the liquid and powdered supplements were added, respectively, 80 mL (group I) and 100 mL (group II) of pooled banked human milk. For comparison, 20 samples of 100 mL of the pool were added to 5 g of the FM85® supplement (Nestlé) (group III). Analyses of carbohydrates, protein, lipids, calcium, phosphorus, sodium, osmolality and caloric content were performed, considering a significant difference p < 0.05. RESULTS: Groups I, II, and III showed, respectively, the following results: protein = 1.81, 2.38 and 1.96 g/dL (p < 0.001); carbohydrates = 6.70, 7.25 and 10.06 g/dL (p = 0.006); fat = 3.75, 3.75 and 3.73 g/dL (p = 0.96); calcium = 36.92, 44.75 and 79.37 mg/dL (p = 0.001); phosphorus = 20.02, 23.28 and 56.30 mg/dL (p = 0.02); sodium = 14.32, 14.40 and 20.33 mEq/L (p = 0.143); osmolality = 391.45, 412.47 and 431.00 mOsmol/kgH2O (p = 0.074); and caloric content = 67.78, 72.27 and 81.65 kcal (p = 0.001). CONCLUSION: The studied additives differ significantly from the commercial additive FM85® in some of its components, and its composition may or may not meet the quantity of nutrients suggested by the most recent recommendations.

ABSTRACT

Background & objectives: Dietary inadequacy is common in developing countries and so is in immunedeficient HIV infected individuals. Hence, an assessment of dietary patterns was done among a group of HIV infected individuals and compared with recommended dietary allowances. Methods: One hundred consecutive HIV infected individuals were interviewed from the Immunodeficiency Clinic of a tertiary care center at Chandigarh. Dietary intake was assessed by 24 h recall method. Mean carbohydrate, protein and fat intakes were evaluated. Mean difference in the calorie intake from recommended dietary intake was then calculated. Mean absolute CD4 cell count was calculated and correlated with BMI and mean calorie intake. Results: Mean weight and BMI of the individuals participated in the study was 58.6 ± 11.7 (range, 34 - 94) kg and 21.5 ± 3.7 (range, 13.6 - 36.7) kg/m2, respectively. Mean total calories intake was 1713 ± 292.8 (860 - 2525) calories/day and mean difference in the calories taken from the standard values was 249.5 ± 190.7 (10.6 - 967.5) calories/day. There was no significant correlation between CD4 cell count and total calories taken. Interpretation & conclusions: In HIV-infected individuals the energy intake was significantly lower than the recommended average intake. Hence, efforts should be taken to ensure that HIV-infected individuals have access to high-quality, nutritious food choices that promote optimal dietary patterns.

ABSTRACT

Rhodomonas salina (Cryptophyta) pastes as feed for Brachionus plicatilis (Rotifera). Rotifers are an important live feed for first feeding larvae of many fish species. The use of concentrated algae cells in the mass culture of the rotifer Brachionus plicatilis (Brachionidae) has opened new horizons for research on this organism. Pastes of Rhodomonas salina (Pyrenomonadaceae) obtained either by centrifugation or flocculation with chitosan were preserved, with or without vitamin C, at -20°C for four weeks and were evaluated biochemically (proteins, lipids, pigments and fatty acids contents) and subsequently, were used to feed the rotifer Brachionus plicatilis at a ratio of 25mg/L/day. Four different microalgae pastes were prepared: (1) centrifuged and preserved with vitamin C (CV), (2) centrifuged and preserved without vitamin C (C), (3) flocculated and with vitamin C (FV) and (4) flocculated without vitamin C (F). All treatments showed similar contents of proteins and total lipids with respect to control culture (a fresh culture of R. salina), with mean values of 40.0±2.32% and 12.0±1.45%, respectively. The pheophytin a/chlorophyll a ratio, a general indicator of the chemical status of microalgal concentrates, was similar (0.09-0.11) between centrifuged pastes and control culture, but was found to be higher in flocculated pastes (1.28-1.48). The fatty acid profile varied with respect to the control culture, mainly in the proportion of the essential polyunsaturated fatty acids (PUFAs): eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). Total PUFAs, EPA and DHA contents were statistically similar between centrifuged pastes and control culture (PUFAs: 47%, EPA: 4% and DHA: 4.7%), whereas values obtained for flocculated pastes were significantly lower. The rotifers grew equally well when fed with centrifuged pastes or control culture (maximum density: 320rotifers/mL; instantaneous growth rate: 0.23rotifers/day, fecundity: 1.49eggs/female and productivity: 43x103rotifers/L/day. No significant effect of vitamin C was found when used as a paste preservative. We concluded that centrifugation is an effective harvesting method, and that freezing to -20ºC for four weeks (no vitamin added), may help maintain the nutritional quality of R. salina paste, similar to fresh microalgae and can be offered to Brachionus plicatilis. Pastas de Rhodomonas salina, obtenidas mediante centrifugación y floculación con quitosano y preservadas con o sin vitamina C, a -20°C fueron evaluadas bioquímicamente y proporcionadas como alimento al rotífero Brachionus plicatilis. Las pastas microalgales: (1) centrifugada y con vitamina C (CV), (2) centrifugada y sin vitamina C (C), (3) floculada y con vitamina C (FV) y (4) floculada y sin adición de vitamina C (F); mantuvieron sus contenidos de proteínas y lípidos totales similares al cultivo control, con valores de 40.0±2.32% y 12.0±1.45%, respectivamente. La relación feofitina a/clorofila a fue similar (0.09-0.11) entre las pastas centrifugadas y el cultivo control, pero mayor en las pastas floculadas (1.28-1.48). Las pastas centrifugadas presentaron porcentajes de PUFAs totales, EPA y DHA similares al cultivo control (PUFAs: 47%, EPA: 4% y DHA: 4.7%) y superiores al de las pastas floculadas. Las pastas obtenidas por centrifugación indujeron un crecimiento del rotífero igual al obtenido con el alimento control (densidad máxima: 320rotíferos/mL; tasa instantánea de crecimiento: 0.23rotíferos/día, fecundidad: 1.49huevos/ hembra y productividad: 43x103rotíferos/L/día). Se concluye que la pasta de R. salina centrifugada y congelada a -20°C, durante cuatro semanas, sin adición de vitamina C, mantiene su calidad nutricional similar a la del alga fresca y puede ser usada como alimento de Brachionus plicatilis.

ABSTRACT

Chemical composition of eggs of the Olive Ridley Lepidochelys olivacea (Testudines: Cheloniidae) and it’s potential as a food source. The Olive Ridley is a worldwide distributed species with high nesting production per season, and in La Escobilla Oaxaca, México, there is a 70% of non-hatched eggs that are lost. In order to evaluate their potential use as a source for human and animal food products, their chemical composition was analyzed. Lyophilized egg samples from 25 turtles were obtained and were analyzed following the analytical methods for fatty acids, protein, fat, ash, moisture, amino acids, vitamins, cholesterol and microbiological agents. The analytical composition obtained was (g/100g): moisture (4.7), ash (3.8), protein (53.7), and fat (47.4). The essential amino acid (g aa/100g protein) content was: Ile (4.4), Lys (6.6), Leu (7.4), Met+Cys (8.8), Phe+Tyr (10.8). The vitamin content was: retinol (340μg/100g), cholecalciferol (5.9μg/100g) and 8.6mg/100 tocopherol, 0.3mg/100g thiamine and 1.1mg/100g riboflavin. The total lipid content (TL), fatty acids (FA), and cholesterol (Chol) were divided into three groups based on the weight of the turtle: (TL) (44.3-48.7-49.1g/100g) and (Chol) (518.4-522.5mg/100g-728.7). A total of 17 Saturated FA (SFA), 8 Monounsaturated FA (MUFA) and 11 Polyunsaturated FA (PUFA) were identified. The most abundant SFA (mg/100g) were: C14:0 (445-772), C16:0 (485-1263); MUFA: C16:1 (456-716), C18:1n-9c (904-1754), and PUFA: C20:4n-6 (105-217); two n-3 fatty acids were identified EPA (48-103) and DHA (97-189). There were significant differences (Fisher, p<0.05) for: (Chol), total FA, SFA, MUFA, PUFAs and n-3 (EPA + DHA) FA. It was not detected any microbiological agent. In conclusion, lyophilized L. olivacea eggs are an option for its inclusion in the development of food products as they can be used as a high quality biological protein and n-3 fatty acid source for fortification and enrichment. Por su potencial como fuente alimenticia, se analizó la composición química de huevo de Lepidochelys olivácea en La Escobilla, Oaxaca, México. El Instituto de Ciencias del Mar y Limnología de la Universidad Nacional Autónoma de México proporcionó 250 muestras de huevo liofilizado de 25 tortugas, que se analizaron siguiendo métodos oficiales para humedad, cenizas, proteína, grasa, lípidos totales(LT) y análisis microbiológicos; además de ácidos grasos(AG) por cromatografía de gases, aminoácidos(AA), vitaminas y colesterol(col) por HPLC. Los resultados fueron los siguientes: (g/100g) humedad(4.7), cenizas(3.8), proteína(53.7) y grasa(47.4). AA esenciales (g aa/100g Proteína): Ile (4.4), Lys(6.6), Leu(7.4), Met+Cys (8.8), Phe+Tyr (10.8); retinol (340μg/100g), colecalciferol (5.9 μg/100g), tocoferol (8.6), tiamina (0.3) y riboflavina (1.1) (mg/100g). Y los de (LT), (AG) y (Col) se concentraron en tres grupos por peso de tortuga: (LT) (44.3-48.7-49.1g/100g), (Col) (518.4-522.5-728.7 mg/100g). Entonces se identificaron 17 AGSaturados, 8 AGMonoinsaturados y 11 AGPoliinsaturados. Los AGS más abundantes (mg/100g): C16:0 (485-1263), AGM: C16:1 (456-716), C18:1n-9c (904- 1754) y AGP: C20:4n-6 (105-217), EPA (48-103) y HA (97-189). También, existió diferencia significativa (Fisher, p<0.05) para (Col), AG totales, AGS, AGM, AGP y AG n-3 (EPA+DHA). No se detectó presencia de agentes microbiológicos. El huevo liofilizado de L. olivacea es una opción para el desarrollo de productos alimenticios por su proteína de alto valor biológico y ácidos grasos n-3.

ABSTRACT

OBJETIVO: Neste trabalho, analisa-se o efeito de dieta hiperlipídico-proteica com baixo teor de carboidrato sobre o peso corporal, peso de órgãos, consumo de ração, parâmetros bioquímicos e alterações histopatológicas no fígado de ratos. MÉTODOS: Foram utilizados 24 animais - 12 no grupo-controle e 12 no grupo-experimental - com peso médio de 160 gramas no início do experimento. Semanalmente, foram verificados o peso corporal e o consumo de ração, e ao final de oito semanas foram feitas as dosagens bioquímicas sanguíneas, pesagem de órgãos e análise histopatológica dos fígados. RESULTADOS: Os animais do grupo-experimental tiveram maior ganho de peso corporal e acumularam mais tecido adiposo que os animais do grupo-controle. Fígado, rins e baço não sofreram alterações quanto ao peso. Os animais que receberam dieta hiperlipídico-proteica tiveram um aumento na ingestão energética acumulada nas oito semanas do estudo. O grupo-experimental desenvolveu hiperglicemia e hipertrigliceridemia, aumento da fração lipoproteína de alta densidade do colesterol e da creatinina sérica quando comparado ao grupo-controle. Foi detectada esteatose hepática no grupo-experimental. CONCLUSÃO: Os resultados demonstraram que dietas pobres em carboidratos e ricas em gordura e proteínas podem acarretar alterações metabólicas prejudiciais ao organismo.


OBJECTIVE: This study analyzed the effect of a high fat, high protein and low carbohydrate diet on the body weight, organ weight, food intake and biochemical parameters of rats and the histopathological changes in their livers. METHODS: A total of 24 animals were used, 12 in the control group and 12 in the experimental group, with a mean weight of 160 grams at baseline. Body weight and food intake were collected weekly. At the end of 8 weeks, the animals were killed for the biochemical tests and weighing of organs and the livers were submitted to histopathological analysis. RESULTS: The animals in the experimental group gained more weight and accumulated more body fat than the animals in the control group. The weight of the liver, kidneys and spleen did not change. The animals fed the low carbohydrate diet consumed more calories during the 8 weeks of the study period. They also developed hyperglycemia and hypertriglyceridemia and presented high high-density lipoprotein cholesterol and serum creatinine. The experimental group also presented hepatic steatosis. CONCLUSION: The results show that low carbohydrate diets that are rich in fats and proteins may result in harmful metabolic changes in rats.

ABSTRACT

The aim of this study was to evaluate the effect of different protein sources with different amino-acid profiles on liver cell development in "Wistar" rats submitted to a food restriction and recovery model. The food restriction model was based on a 50% ingestion restriction for the rats fed with the control diet (21 days) and "ad libitum" recovery (a period of 21 days). The protein sources used in this study were: Yeast autolysate (YA), whey protein concentrate from bovine milk (WPC), a mixture containing the YA and WPC in the proportion of 64:36 (protein base), commercial casein (CC) which was used as the experimental treatment (EC) and control treatment (CP). The following parameters were evaluated in this study: the amino-acid profile of the protein sources, the development of liver cells (liver weight and growth rates - RNA, DNA, protein), weight and number of hepatocytes in the whole organ. The results showed that the treatment with (YA) was the most affected by the food restriction, showing an incomplete (leucine-deficient) amino-acid profile, a lower development of liver cells, lower growth of the liver due to a lower growth by cellular hyperplasia (number of cells), lower capacity of cell division and DNA synthesis. However, it showed a higher ability for RNA synthesis, thus indicating that growth in the restricted phase was mainly due to increase in the size of hepatocytes (cell hypertrophy). During the repletion period, all food treatments showed normal liver development, i.e. cell growth and organ hyperplasia and hypertrophy.


El objetivo de este estudio fue evaluar el efecto que diversas fuentes de proteínas con diferentes perfiles de aminoácidos ejercían en el desarrollo de las células hepáticas en ratas "Wistar" sometidas a restricción y reposición de la ingestión de alimentos. El modelo de restricción alimentar consistía en disminuir 50% del consumo de los animales control (período de 21 días) y la recuperación con ingestión "ad libitum" (período de 21 días). Las fuentes de proteínas utilizadas en este estudio fueron: autolisado de levadura (ATL); concentrado proteico de suero de leche bovino (CPL); mezcla de CPL y ATL, en la proporción de 64:36 (base proteica), caseína comercial (CC), que fue utilizada como tratamiento experimental (CE) y como estándar (CP). Fueron evaluados el perfil de aminoácidos de las proteínas, el desarrollo de la célula hepática (peso del hígado y las tasas de crecimiento: ARN, ADN y proteína total), el peso y número de hepatocitos en el órgano. Los resultados mostraron que el grupo tratado con (ATL) fue el más afectado por el proceso de restricción de alimentos, la proteína presenta un perfil incompleto de aminoácidos(deficiente en leucina). Había menor desarrollo de las células del hígado, menor crecimiento del hígado debido a un menor crecimiento por hiperplasia celular (número de células), menor capacidad de división celular y de síntesis de ADN, sin embargo, mostraron una mayor capacidad para sintetizar ARN indicando que el crecimiento en la fase de restricción se debió principalmente al aumento en el tamaño de los hepatocitos (hipertrofia celular). Durante la fase de recuperación alimentar de todos los tratamientos hubo un desarrollo hepático normal, o sea crecimiento de las células y del órgano por hiperplasia e hipertrofia.


O objetivo deste estudo foi avaliar o efeito de diferentes fontes proteicas com diferentes perfis de aminoácidos sobre o desenvolvimento celular hepático de ratos "Wistar" submetidos à restrição e recuperação alimentar. O modelo de restrição alimentar foi baseado na restrição de 50% da ingestão dos animais controle (período de 21 dias), e recuperação ad libitum (período de 21 dias). As fontes proteicas utilizadas neste estudo foram: autolisado de levedura (ATL), concentrado proteico de soro de leite bovino (CSL), mistura contendo CSL e ATL na porcentagem de 64:36 (base proteica), caseína comercial (CC), a qual foi utilizada como tratamento experimental (CE) e como tratamento padrão (CP). Avaliouse, neste estudo, o perfil de aminoácidos das fontes proteicas, o desenvolvimento celular hepático (peso do fígado e dos índices de crescimento - RNA, DNA, proteína total), peso dos hepatócitos e número de hepatócitos em todo órgão. Os resultados mostram que o tratamento com (ATL) foi o mais afetado pelo processo de restrição alimentar, apresentando um perfil de aminoácido incompleto (deficiência em leucina); apresentou menor desenvolvimento celular hepático; menor crescimento do fígado em função do menor crescimento por hiperplasia celular (número de células), menor capacidade de divisão celular e síntese de DNA. Entretanto, apresentou maior capacidade de síntese de RNA, indicando que o crescimento na fase de restrição ocorreu principalmente por aumento no tamanho dos hepatócitos (hipertrofia celular). Durante o período de restauração alimentar todos os tratamentos apresentaram desenvolvimento hepático normal, ou seja, crescimento de células e do órgão por hiperplasia e hipertrofia.
